Ingredients
Smoked sausage: About 1 pound, sliced (kielbasa or andouille work well)
Cabbage: 1 medium head, chopped or sliced
Potatoes: 4 medium, thinly sliced (optional, some recipes omit)
Onion: 1 medium, chopped or sliced
Butter or oil: 2-3 tablespoons for sautéing
Flour: 1/2 cup (if making a traditional cream sauce)
Milk or cream: 2 1/4 cups (for the sauce)
Shredded cheese: 1/2 to 1 1/2 cups, such as cheddar or mozzarella (optional, for a cheesy top)
Directions
Step 1: Put chopped cabbage in a bowl with water and microwave for about 10 minutes. Half way through add the red pepper and onion. Drain cabbage .
Step 2: In a sause pan add butter on low, when butter was melted add flour . Cook for a few minutes and add all the seasonings. Slowing add milk leaving some to the end. Add cheese and see how much milk you will need. Add additional milk if too stiff.
Step 3: Cut sausage into bit size bites and add to cabbage. Toss the cabage with the mixture with the cheese sause. Pour into a sparded 9×13 dish. Top with Pimeentos. Add bread crumbs and the additional 2 Tablespoons of butter.
Step 4: Bake at 350 for about a 45-minutes to 1 hour. You will want the cabbage to still be crisp.
