Crock Pot Bacon Cheese and Potatoes

Ingredients

Bacon: 1/4 pound, diced (often cooked before adding to the crock pot)

Potatoes: 4 medium (such as Russet or Yukon Gold), thinly sliced

Onions: 2 medium, thinly sliced

Cheddar Cheese: 1/2 pound (about 2 cups), sliced or shredded

Butter: To dot the layers

Seasoning: Salt and black pepper to taste

Garnish (Optional): Sliced green onions or chives 

Directions

Step 1: Line crock pot with foil, then layer half each of the bacon, onions and potatoes in the crock pot.

Step 2: Season potato mixture with ¼ of Rick’s House Seasoning, and dot with 1/2 the butter.

Step 3: Repeat vegetable layer and seasonings – then dot with remaining butter.

Step 4: Cover with foil and cook on low for 4 1/2 hrs.

Step 5: Top with cheese, re-cover with foil and cook for an additional 20 minutes. Taste and adjust seasonings with salt or pepper
