1 bag coleslaw mix
1 red bell pepper, diced
? cup parsley, chopped
Dressing:
? cup creamy peanut butter
2 tablespoons rice vinegar
2 tablespoons low-sodium soy sauce
1 ½ tablespoons sesame oil
2 tablespoons honey
1 tablespoon brown sugar
1 clove garlic, minced
2 teaspoons minced ginger
Salt and pepper, to taste
Sesame seeds, garnish
Step 1: Combine cabbage mix, bell pepper, onions and parsley into a bowl.
Step 2: Whisk peanut butter, the juice of 1 lime, vinegar, soy sauce, honey, brown sugar, oil, garlic and ginger until combined. Add salt and pepper, to taste.
Step 3: Pour dressing over top of salad, toss to combine. Garnish with sesame seeds.
