A wonderful fall dish with the pumpkin, sage and sausage.
Package of a pasta of your choice
1 pound Italian Sausage
1 small can of 100% pumpkin
Small chopped onion
2 cups cream
rubbed sage and sage leaves
salt and pepper
5 ounces goat cheese
Step 1: Cook pasta according to package directions. Drain and save about a cup of the pasta water.
Step 2: Cook Italian sausage and onion together until sausage is cooked. You should add a little olive oil to the skillet to help sausage not to burn
Step 3: Once sausage is cooked, add the rubbed sage (to your taste, maybe 1/2 teaspoon)
Step 4: Add pumpkin and cream, goat cheese and mix. Turn off heat.
Step 5: Add pasta and water if needed. Let the mixture rest for about 5 minutes and add salt and pepper if needed.
Step 6: Fry the sage leaves in a little butter and place on top of pasta dish.
