Peanut Butter Cheese Cake Sandwiches

Ingredients

1 Box Ritz Crackers

1 Cup Creamy Peanut Butter

16 Ounces Cream Cheese at room temp

1/2 Cup Sugar

1/2 Cup Sour Cream

1 Teaspoon Vanilla

2 Large Eggs

Directions

Step 1: 2 Large Eggs

Step 2: This recipe will make about 32-36 cheese Cake Sandwiches

Step 3: Take 2 Ritz Crackers and put a small amount of peanut butter on one cracker and spread to the edges.  you can break the 1 cup of peanut butter into 1/2 cup portions so you will know how much to use on the crackers Put other cracker on top and put in a muffin pan with a paper muffin cup.

Step 4: Put the soften creamed cheese and 1/2 cup of sugar in a large bowl and beat with an electric mixer.  Once everything is has combined, add 1/2 cup peanut butter, 1/2 Cup Sour Cream, vanilla and eggs.  Beat again until everything is mixed togethers.

Step 5: Using a small ice cream scoop, scoop mixture on top of the cracker until almost full.

Step 6: With the remaining sleeve of crackers, crush into rough bits and add a small amount to the top of each sandwich.

Step 7: Bake at 275-degrees for 22-25 minutes.  Cool and when completely cool refrigerate for a minimum of 2-hours.
