I have looked and tried for years to recreate the former Indianpolis Amici's Restaurant and I have now come up with what I love. Tons of flavor with olives and capers and more.
1 28-ounce can of whole peeled tomatoes
4 tablespoons olive oil
2 tablespoons freshly grated garlic
1/4 teaspoon red pepper flakes
1 cup roughly chopped kalamata olives
3 tablespoons capers
salt and pepper

Step 1: Place the whole tomatoes in a large bowl, use your hands to squeeze and crush the tomatoes into a sauce.
Step 2: Heat the olive oil in a large skillet set over medium heat. Add the grated garlic and red pepper flakes: fry for about a minute. Immediately add the tomatoes, olive, capers, salt, pepper to pan. Stir well; turn the heat down and cook uncovered for about 20-30 minutes.
Step 3: Cook pasta to al dente, drain and add to sauce and finish pasta in sauce.
