I came up with the recipe while I was looking for a potato salad that would go well a hearty German meal.
1 pount bacon, chopped
1 large white onion, chopped
1 pound Polish sausage
3 poundsmedium red potatoes, cut into quarters
1 can (10 3/4 ounces) condensed cream of potato soup, undilted
1 can sauerkrout, drained, do not rinse
1/2 cup water
1/2 cup cider vinegar
1 tablespoon sugar
Salt and pepper to taste
Step 1: In a large skillet, cook bacon over medium heat until crisp. Add onion and continue to cook until onion is tender. Add Sausage and cook until sausage is browned.
Step 2: Place potatoes in a slow cooker. Add the bacon, onion mixture over the potatoes.
Step 3: In the same skillet, add remaining indgrendents and cook until hot. Pour over the other mixture in slow cooker. Cook on high for about 4 hours our until potatoes are tender but not mushy
