Snow Pea and Avocado Slaw

Ingredients

10 ounces (about 283g) snow peas, thinly sliced lengthwise

2 medium avocados, thinly sliced or cut into chunks

2 stalks celery, thinly sliced (optional, add the leaves too)

¼ cup toasted walnuts or pine nuts, chopped (optional)

Minced chives or fresh parsley for garnish (optional) 

Lemon-Olive Oil Dressing

Salt and black pepper to taste 

3 tablespoons extra virgin olive oil

2 tablespoons fresh lemon juice

Directions

Step 1: Chop the Snow Peas into long then strips. Add to bowl

Step 2: Thinly slice celery and if there are some leaves, chop them also. Add to bowl

Step 3: Mince chives and add to bowl

Step 4: Dice avocado and add to the bowl

Step 5: Add olive oil (just enough to cover), add the juice of one lemon and salt and pepper. Toss and let set for about 5 minutes and taste. Adjust seasonings. You can top with some toasted walnuts just before serving.
