8 ounces pasta
1 tablespoon oil
1 pound boneless and skinless chicken breasts, cut into bite sized pieces
1 tablespoon taco seasoning
1 tablespoon oil
1 onion, sliced or diced
1 green bell pepper, sliced or diced
1 red bell pepper, sliced or diced
1 yellow bell pepper, sliced or diced
3 cloves garlic, chopped
2 cups chicken broth
1 (15 ounce) can diced tomatoes
1 tablespoon taco seasoning
1/2 cup sour cream, greek yogurt or heavy cream
1/4 cup Parsley, chopped
Step 1: Stat cooking the pasta as directed on the package
Step 2: Meanwhile, heat the oil in a pan over medium-high heat, add the chicken, sprinkle on the taco seasoning and cook until lightly golden brown on all sides, about 5-7 minutes before setting aside
Step 3: Heat the oil in the pan over medium-high heat, add the onions and peppers and cook until just tender and slightly charred, about 5-7 minutes
Step 4: Add the garlic and cook until fragrant, about a minute
Step 5: Add The broth, tomatoes, pasta, chicken and taco seasoning and cook until warm, about 5 minutes before removing from heat and mixing in the sour cream and Parsley
