2 Pounds Ground Chicken
2 Leeks Washed, Chopped
6 TBS Sabzi Koufteh (Jewish Seasoning)
Salt and Pepper to taste
3 Cloves Garlic Pressed
1 Container of Sliced Mushrooms
1/4 Brandy
8 Ounce Parmesian Cheese Grated
2 TBS Vegeta (Eastern European Seasoning)
2-3 TBS Tomato Paste
1 Egg
Step 1: Drain leeks and saute in olive oil until soft. Set aside in a large bowl to cool.
Step 2: In the same skillet, add equal parts olive oil and butter. When butter melts, add mushrooms and cook until mushrooms have just soften. Add brandy and flame. When cooked down some add to the leeks.
Step 3: Once the leek and mushroom mixture is cool, add everything eles to the bowl and mix together.
Step 4: Take a very small amount and put in a non-stick skillet and sear (on oil) until cooked though. Taste and adjust seasoning.
Step 5: Form 8-10 patties and cook in a non stick skillet with no oil until cooked through. About 6 minutes per side.
Step 6: Note: You may add fresh spinach, kale, beet greens to this mixture for added flavor and texture. Plus it will be even healthier for you.
