This is like no other grilled cheese you have ever had.
7 ounce Gruyere cheese, cut into 24 equal pieces, room tempetature
2 ounces Brie Cheese, rind removed
2 -3 tablespoons of vermouth or dry white wine
4 teaspoons minced fresh chives or 2 teaspoon dried
1/8 teaspoon cayenne pepper
1-2 teaspoons Dijon mustard
3 tablespoons unsalted butter, softened
Step 1: Process Gruyere, Brie and wine in the food processor until a smooth paste is formed. Add chives and cayenne and pulse again until blended
Step 2: Mix butter and mustard together in a bowl until mixed together
Step 3: Put cheese mixture on bread, rye bread is the best. Butter each side of bread and put into a hot non-stick skillet. Cook until golden brown and crispy. About 6-8 minutes per side
