1/2 cup diced onion
1/2 head roasted garlic
1 Tablespoon olive oil
1/4 cup tomato paste
1/2 cup water
3/4 cup Worcestershire sauce
1/2 cup distilled white vinegar
1/2 cup packed brown sugar
1/2 lemon (juiced and the zest, chopped fine)
1/4 cup plus 3 Tablespoons low sudium soy sauce
1/2 cup raisens
3 Tablespoons prepared yellow mustard
1-2 chipotle in adobo sauce, minced
salt and pepper to taste
Step 1: Sweat onion in oil in a saucepan over medium heat until softened, but not browned.
Step 2: Stir in the rest of the ingredients simmer for 20-30 minutes. Strain to remove all the solids and taste. Adjust seasoning with salt and pepper. Should yeild about a cup or more.
