Old Fashioned Vegetable Beef Soup

This is the best Vegetable Soup that I have ever made. Wonderful flavor.

Ingredients

1 - 1 1/2 Sirloin Steak

2 tablespoons olive oil

2 cups chopped onion

1 large bag of coleslaw mix

Garlic

1 cup chopped celery

4 cups low sodium beef broth

2 cups unpeeled diced russet potatoes

1 can diced tomatoes in juice

1-2 tablespoons Worcestershire sauce

3 tablespoon flour

2 tablespoons unsalted butter, softened

2 tablespoons tomato paste

1 cup of any frozen vegetable you want, corn, peas, green beans etc. Only one cup total

Salt and pepper to taste

Directions

Step 1: Cut steak into cubes and cook in oil

Step 2: Add onion cook until softened then add garlic

Step 3: Add celery and coleslaw mix and cook until just soft

Step 4: Stir in broth and potatoes and simmer until potatoes are cooked

Step 5: Add Worcestershire sauce. Mix flour, butter and tomato paste until combine. Bring soup to a boil and add flour mixture to the soup

Step 6: Add in frozen vegetable and cook until hot. Season with salt and pepper.
