Onions cooked with potatoes and chicken breast in a creamy curry sauce.
One onion sliced
One tablespoon oil
Three potatoes, peeled and sliced
Three boneless, skinless chicken breasts, cubed
Two eggs
One cup of heavy cream
One teaspoon curry powder
One teaspoon Herbes De Provence
One tomato, thinly sliced
One and a half cups Gruyere cheese
Salt and pepper
One thinly sliced green onion
Step 1: Add oil to a non-stick pan
Step 2: Turn on medium heat
Step 3: Add sliced onion
Step 4: Add sliced potatoes
Step 5: Sprinkle with salt and pepper
Step 6: Sprinkle chicken with salt and pepper, massage into the chicken. Add to potato/onion mixture
Step 7: Whip eggs, cream, and curry powder and pour over mixture
Step 8: Sprinkle Herbes De Provence over mixture
Step 9: Cover with parchment paper and aluminum foil. Bake forty minutes at 390 degrees
Step 10: Remove from oven. Sprinkle top with cheese and top with tomatoes. Add a little salt and pepper
Step 11: Bake another ten minutes, uncovered
Step 12: Top with sliced onions
Step 13: Let rest for ten minutes before slicing
