One bag of navy or pinto beans
1 Cup fully cooked ham cut into cubes
One celery stock
1/2 cup onion
Salt Pork or bacon
Fresh ground pepper
Soak Beans for 4-8 hours in water
Step 1: In the mean time; take more water, bones, salt pork or bacon, celery, carrot, roasted garlic, onions and pepper to make stock. Bring to a boil, then turn down to low and cook for 2-4 hours. Strain and cool down, skim fat off the top.
Step 2: Drain beans, take beans, ham and add to stock and cook on low for 3-4 hours. Taste for seasoning and adjust.
Step 3: Serve with: Pickled Pepper Relish, Fried Potatoes, Corn Bread, Chopped Onions, Hot Sauce, Chopped Jalapeño Peppers, Okra or any other sides that you enjoy.
