Serves 6
1 blind baked pie crust (either store bought or homemade)
4 strips center cut bacon
2 cups broccoli florets, chopped
1 cup grated colby jack cheese
3/4 cup milk
1/2 cup heavy cream
2 tablespoons Brandy
3 eggs
1 teaspoon Rick's House Seasoning
1/16 teaspoon freshly grated nutmeg
Step 1: Preheat the oven to 400 degrees F.
Step 2: Cook the bacon in a skillet over medium heat for about 10 minutes until crisp, then chop the bacon into pieces and reserve for later. Toss the chopped broccoli with a little of the pan drippings or olive oil and Rick's House Seasone and place onto a rimmed baking sheets and bake until tender and brown edges develop.
Step 3: Remove from oven and turn over down to 350 degrees F.
Step 4: Evenly spread the cooked broccoli and bacon in your blind baked tart crust, and top it with the grated cheese.
Step 5: Make the custard by whisking together the milk, Brandy, heavy cream, eggs, a little salt and pepper, and the nutmeg. Pour the custard into the tart shell, and bake the tart for 25-30 minutes. The tart is ready when you can no longer see liquid but the center of the tart jiggles slightly when moved.
Step 6: Cool to room temp and cut the tart into pieces and serve!
