Rick's Easy Beef Vegetable Soup

If you don't have the time for a long cooked soup, this is your answer.

Ingredients

1 Large Onion

2 Ribs of Celery

3 1/2 Cups of any vegetables that you like

1 Quart of Beef Stock (I use my own homemade beef stock)

3-4 Cups Mr. and Mrs. T Bold and Spicy Bloody Mary Mix

1 Pound Top Sirloin cut into bite size pieces

2 Tablesspoons Olive Oil

Directions

Step 1: Chop and dice onion and celery.  In a large pot, heat up and when hot add olive oil, onion and celery.  Cook until soften Add everything else and cook over very low heat covered for about an hour.  Never bring the soup to a boil, just a low simmer.  Turn off heat and keep covered for about 30-minutes or so.  Taste and adjust seasoning with salt, pepper, worcestershire sauce and or some of Rick's House Seasoning.  Just before serving on each individual bowl top with some chopped chives or parsley.
