16 ounce package whole wheat or red lentil spaghetti
1 pound ground beef
1 medium onion, chopped
26 ounce Rick's Red sauce - See below (you will need to double the recipe)
1/2 teaspoon seasoned salt or Rick's House Seasoning
2 eggs
1/3 cup grated Parmesan cheese
5 tablespoons butter, melted
2 cups small curd cottage cheese
4 cups shredded mozzarella cheese
Rick’s Red Pasta Sauce:
2 cans 16 ounce Diced Tomatoes
2 Tablespoons Butter
1 Large Onion
Pinch of Sugar - Optional
Put everything in a pan and simmer for 3-4 hours. After cooking blend or stir everything together. This is just the basic recipe. You can add basil, or other seasonings for other recipes.
Step 1: Cook spaghetti according to package directions.
Step 2: Meanwhile, in a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain.
Step 3: Stir in the spaghetti sauce and seasoned salt; set aside
Step 4: In a large bowl, whisk the eggs, Parmesan cheese and butter. Drain spaghetti; add to egg mixture and toss to coat.
Step 5: Place half of the spaghetti mixture in a greased 9x13 baking dish. Top with half of the cottage cheese, meat sauce and mozzarella cheese. Repeat layers.
Step 6: Cover and bake at 350 degrees for 40 minutes. Uncover and bake 20-25 minutes longer or until cheese is melted.
