I know I have a lot of chili recipes on the site. If you are looking for something different, this is the recipe for you.
4 slices thick cut bacon finely chopped
1 clove garlic
3-4 pounds lean chuck roast cut into small pieces
1/4 cup flour
3 tablespoon chili powder
2 teaspoons ground cumin
2 teaspoons smoked Spanish paprika
1 teaspoon chipotle pepper
1 tablespoon garlic powder
Salt and Pepper to taste
2 14.5-ounce cans fire roasted diced tomatoes
2 8-ounce cans tomato sauce
12 ounces beer
2 tablespoons Worcestershire
Step 1: In a large, heavy bottomed pot over medium heat cook bacon until it just begins to brown.
Step 2: Leave onion in pan and add onion, stirring occasionally, until translucent, Stir in garlic and cook for about one minute.
Step 3: Toss beef with flour, salt, pepper and garlic powder.
Step 4: Add beef to onion mixture and increase heat.
Step 5: Stir in spices and 1 teaspoon of salt. Cook for just a few seconds. Add tomatoes, tomato sauce and Worcestershire and bring to a boil
Step 6: Reduce heat to medium low, cover and cook for about 1 hour or until meat is tender.
