A hearty and tasty Italian sausage and tortellini soup with spinach, the perfect meal.
1 teaspoon oil
1 pound Italian sausage
1 onion diced
2 cloves garlic, pressed or chopped
1 pinch red pepper flakes
6 cups chicken stock
1 28 can diced tomatoes
2 tablespoons tomato paste
1 teaspoon oregano
1 pound cheese tortellini
1/2 cup parmigiano reggiano cheese grated
10 ounces fresh spinach
salt and pepper
1/4 cup dried or fresh basil
Step 1: Heat the oil in a large sauce pan over medium heat. Add the sausage and onions and cook, breaking up the sausage with spoon. Cook until sausage is cooked through about 10 minutes. Add garlic and red pepper flakes, cook for another 30 seconds.
Step 2: Add the stock, tomatoes, tomato paste, oregano and tortellini. Bring to a boil, reduce the heat and simmer until the tortellini is cooked, 7-10 minutes.
Step 3: Add cheese and spinach, cook until the cheese has melted into the broth and the spinach is wilted, just a minute or so. Taste and adjust with salt and pepper. Add basil off heat.
