An oldie but oh so good.
3-5 Ripe Tomatoes
1 1/2 cups grated Cheddar Cheese
1 Onion Diced
3 Clove of Garlic
1/2 Teaspoon Butter
1/2 Teaspoon Olive Oil
1 Cup Chopped Basil
1 1/2 Cup Mayonnaise (Homemade is best)
Salt and Pepper
1 Pie Crust
Step 1: Turn on over to 350 degress and blind bake the pie crust for 20-25 minutes
Step 2: Slice the tomatoes in half and squeeze the jelly and seeds out. Than slice in half again the same way. Place on a rimmed cookie sheet with a rack salt and pepper and let drain for at least 2 hours turning over half way through.
Step 3: Cook onion in olive oil and butter until lightly browned. Add garlic and cook for 1 minute more.
Step 4: Mix cheese, basil, mayonnaise and pepper to taste.
Step 5: Remove pie crust from oven and add tomatoes. Sprinkle over the onion and garlic mixture. Top with the cheese mixture and bake at 350-degrees for 40-45 minutes.
Step 6: Let cool and serve at room temperature.
