A wonderful breakfast, light lunch or even for a hot summer dinner
1 ripe tomato sliced
3 eggs
1 cup freshly graded cheddar cheese (very sharp)
Olive Oil
1 teaspoon salt and pepper
1 teaspoon Italian herb mix
Step 1: Fry tomatoes on both sides 2-3 minutes per side
Step 2: Pour eggs over tomatoes
Step 3: Top with salt and pepper and Italian herb mix and the cheese cheese
Step 4: Cover and cook for 10-12 minutes
Step 5: Pour out on to a plate
Step 6: Slice and eat
