This is a great salad to go along with a Vegan or Vegetarian meal or to put on the table for your family or pitch in.
About 10 ounces of Snow Peas
1 lemon
Chives
Salt and Pepper
Step 1: Chop the Snow Peas into long then strips. Add to bowl
Step 2: Thinly slice celery and if there are some leaves, chop them also. Add to bowl
Step 3: Mince chives and add to bowl
Step 4: Dice avocado and add to the bowl
Step 5: Add olive oil (just enough to cover), add the juice of one lemon and salt and pepper. Toss and let set for about 5 minutes and taste. Adjust seasonings. You can top with some toasted walnuts just before serving.
