Chicken Meatballs

These meatballs are great for a salad or even in a bun

Ingredients

2 pounds ground chicken thighs. Grind your own

2 large eggs

1/2 breadcrumbs (make your own and bake them)

1/2 cup fresh parsley or 1/4 cup dry

1/4 cup white wine

1 tablespoon salt

1 teaspoon ground fennel

1 teaspoon pepper

Directions

Step 1: In a bowl, mix everything together and put in the fridge for an hour or so to firm up.

Step 2: Line a baking sheet with parchment paper and heat over to 400 degrees.

Step 3: Form golf ball size meatballs and back for about 20 minutes, turning once halfway through.
