No mayonnaise, just cider vinegar and olive oil
4 pounds fingerling potatoes
Salt and pepper
1/4 or a little more olive oil
5-6 tablespoons of apple cider vinegar
A mixture of fresh and dried herbs of your liking and the amount you like
2 scallions, chopped
1 stalk celery, chopped
Step 1: Cook potatoes in salted water until soff
Step 2: When potatoes are cooked, drain and add oil and vinegar and using a potato masher, break up potatoes some to all to absorb oil and vinegar.
Step 3: Stir in herbs, celery and scallion. If more oil or vinegar is needed add now.
Step 4: Add salt and pepper and adjust season to your taste.
