Very close to the other Spanakopita pie, this just has a different twist.
1 Tablespoon butter and olive oil
1 Onion chopped
1 Clove of garlic
1 Large bag of fresh spinach
One pie crust (homemade is best)
1 Tablespoon flour
1/2 Cup freshly grated parmesan
1/3 cup feta crumbled
5 Large Eggs
1/2 cup milk
1/2 teaspoon Kosher salt
1/4 teaspoon freshly ground pepper
1/8 teaspoon freshly ground nutmeg
Step 1: Preheat oven to 375-degrees
Step 2: Bring a large pot of water to a boil and add spinach. Quickly stir and drain under cold running water.
Step 3: Melt butter and oil in a large skillet and add onion and spinach. Cook for about 8 minutes or until onion is soft. Add pressed garlic and cook for just a minute longer. Let it cool some.
Step 4: Roll out pie crust or if using a store bought one, place in a 9-inch pie plate a place back in the fridge for about 10-15 minutes.
Step 5: Grate the parmesan cheese and mix with the flour, set aside. Crumble feta and set aside.
Step 6: In a bowl, crack eggs and add milk, salt, pepper and nutmeg. Mix until blended.
Step 7: Remove the pie shell from the fidge and start wtih parmsan cheese and put in the bottom of the pie shell, Add feta next and then the onion and spinach mixture. Pour egg mixture over the top
Step 8: Bake for 50-minutes or until a knife is inserted into the center and comes out clean. Let cool slightly before cutting into wedges
