1 lb ground beef
1 egg, lightly beaten
1/4 cup fresh parsley, coarsely chopped
1/4 cup onion, diced
2 garlic cloves, minced
1/4 cup Panko breadcrumbs
1/2 teaspoon salt
1/2 teaspoon black ground pepper
1/4 cup barbecue sauce
2 small onions
1 pack bacon
Step 1: In a large mixing bowl combine the ground beef, egg, chopped parsley, diced onion, garlic, panko breadcrumbs, salt, pepper, and barbecue sauce. Shape the mixture into small meatballs and set aside.
Step 2: Cut the other 2 onions in half, lengthwise and peel all the layers of the onion. Then, cover every meatball with a couple of slices of the onion, add more ground beef to larger pieces of onions as needed. Shape them with your hands so they are round as possible. Wrap each onion-covered meatball with 2-3 slices of bacon, securing them with the help of toothpicks.
Step 3: With smoker set to full smoke, cook for 1 hour. Then set smoker to 350?F and cook for additional 45 minutes Allow the meatballs to cook for an additional 45-60 minutes.
Step 4: Pro tip: No smoker? No problem! Alternatively, you can bake the meatballs in a baking pan at 425?F for approximately 40 minutes. Check with a meat thermometer for an internal temperature of 175?F and your meatballs should be ready to be devoured! Use the larger onion slices to wrap the meatballs, it'll just be easier!
