Serves 2
2 carrots
1 tablespoon oil
¼ cup parmesan cheese
1 tablespoon garlic powder
1 teaspoon pepper
¼ cup fresh parsley, chopped
½ teaspoon salt
Dipping Sauce:
2 tablespoons greek yogurt
1 tablespoon lemon juice
½ teaspoon garlic salt
1 teaspoon pepper
Step 1: Preheat oven to 400°F
Step 2: Slice the top and bottom off of carrots then slice them in half, slice each half into thirds lengthwise.
Step 3: In a large bowl, mix ingredients with carrot sticks.
Step 4: Spread on a baking sheet. Bake for 15-20 minutes (depending on how crispy you want them).
Step 5: Allow to cool for 5 minutes.
Step 6: Dipping SauceMix together ingredients in a small bowl.
Step 7: Serve with warm carrot fries.
