3 tablespoons of olive oil
One large the Vidalia onion
1 pound of hamburger
Three quarters of a cup of frozen corn
One cup of frozen peas
One can of creamed corn
8 cups of mashed potatoes
A quarter tablespoon of onion powder
A quarter tablespoon of garlic powder
Shaker of salt and pepper
A quarter stick of butter
One cup of shredded cheddar cheese
Step 1: Sauté onion and salt in oil. The salt will keep the onion tender and translucent and not browned
Step 2: When translucent add hamburger and brown until cooked; breaking up as much as possible.
Step 3: Once cooked drain as much as possible of all liquid in a colander - I use a meshed one. Once all liquid is drained and hamburger onion is pretty dry (now preheat oven to 350) return hamburger onion to pan.
Step 4: Add frozen corn and frozen peas and cook for about three minutes on medium stirring and mixing well.
Step 5: Add garlic, onion powder, pepper and can of creamed corn. Mix well with heat on low while preparing a 4 x 4 or 2 x 5 baking dish greased with butter.
Step 6: Once hamburger mixture is heated through add to buttered baking dish. Spread evenly.
Step 7: Spread mashed potatoes evenly layered on top. Top with pats of butter and place in preheated oven
Step 8: Once butter is well melted about 10 minutes add cheese and bake for an additional 20 minutes.
