4 Tablespoons Olive Oil
1 Medium Yellow Onion, Minced
2 Cups Cooked Brown Rice (the kind that is already cooked is okay, just heat it up)
1 Cup or so of chopped raw beets
1 Cup Walnuts
2 Cloves of Garlic put through a press
2 Large Eggs
Caper Aioli:
1/2 cup homemade Mayonnaise
2 Tablespoons Capers chopped
1 Tablespoon Stone Ground Mustard
The zest of an orange and half of a orange juiced
Kosher Salt and Pepper
A dash of hot pepper or hot sauce.
Step 1: Heat up a skillet over medium heat. Once skillet is hot add 2 tablespoons olive oil and minced onions. Season with salt and pepper and saute until edges are browned and onions are soft. Let them cool off.
Step 2: Add cooked brown rice, cooled onions, chopped beets, walnuts and garlic to a food processor bowl fitted with a steel blade. Pulse about 10 to 15 30-second pulses. When everything is chopped, remove and place in a bowl. Add the eggs and mix well add some more salt and pepper. You should be able to get 4 very large patties or 6 regular patties. Form patties. Heat up your pan and then add the oil once the pan is hot. Gently fry for about 10 minutes per side and only turn once.
Step 3: For the Caper Sause, mix everything together and chill for at least 1-hour.
Step 4: Serve the burgers with or without a toasted bun with some bibb lettuce and the caper sause.
